Merry Christmas from our family to yours!

We were so fortunate to have my GOAT Lolo in town for Christmas this year. He's had a rough go at it lately, losing our Lola and all this year. We're so grateful for everything that he's done that we cannot take this visit for granted.

Great news, he's finally acknowledged that my pandesal meets his standard and he's even called it "perfect". Low key that was a major milestone and accomplishment for me, as he's always found something to critique it. Love you, Lolo, you're my mentor!

Also a huge shout out to my mom and Tita/Aunty, for they both share birthdays on Christmas!!!! Love the two of you so much. I couldn't have asked for a better Mom and Ninang to grow up around.

Insular Bakery Comox will not be taking orders this weekend to properly observe National Truth and Reconciliation day and learn more about what we can do to help be allies to the Indigenous Peoples of this country.

Colonized supports the colonized. As Filipinos, we too were colonized over history and forced to assimilate, losing our cultures and traditions along the way. It is only recently that the younger generations are trying to reclaim lost parts of our culture. This is why it is important to learn and grow along the original protectors of this beautiful land we call "Canada".

If you have time, look up the movie Bones of Crows, or the series Coming Home (Wanna Icipus Kupi) as a start to how you can help become more aware of what happened in the dark past of this country.

Getting close to perfecting my grandfather's Putok Pandesal recipe.

Putok, to burst, pop, explode, Pandesal is a dense, non-proofed version of the classic pandesal recipe. Lots of people cheat and use scissors to create a star pattern on top to help along the "putok", while the true way is achieved through the amount yeast along with mixing time and by temperature of the oven.

Grandpa, I hope you're proud of this! Getting closer and closer to replicating what you showed me! ❤️👍🏽
