I had the privilege of reading one of my children’s books to a kindergarten class, and what a wonderful experience it was.

As an author, you spend so much time writing, editing, and imagining how a story will be received. Seeing those little faces light up, hearing their laughter, and watching them become completely immersed in the story reminded me exactly why I started writing children’s books in the first place.

There’s something special about sharing a story with young readers and knowing that, even for a few moments, you’ve captured their imagination.

A heartfelt thank you to the students and staff for making me feel so welcome. It was truly one of the highlights of my author journey so far.

This recipe won’t be appearing in The Bay Kitchen, but it turned out too good not to share.

I was gifted some honey garlic moose sausage and decided to use it in a simple pasta dish. The sweetness of the honey pairs perfectly with the soy sauce, while the extra garlic and a pinch of chili flakes add plenty of flavour. It’s quick, easy, and makes a great weeknight meal.

Honey Garlic Moose Sausage Pasta

Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 4–6

Ingredients

* 10 oz spaghetti
* 1½ lb honey garlic moose sausage, sliced (or any kind of sausage, any flavour)
* 2 tablespoons olive oil
* 1 heaping tablespoon minced garlic
* ⅓ cup honey
* ⅓ cup soy sauce
* ½ teaspoon chili flakes
* Salt and pepper, to taste

Directions

1. Cook the spaghetti according to package directions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the moose sausage and cook until browned.
3. Stir in the minced garlic and cook for 1 minute, until fragrant.
4. Add the honey, soy sauce, chili flakes, and a light seasoning of salt and pepper. Stir well and simmer for 2 to 3 minutes, until the sauce begins to thicken.
5. Add the cooked spaghetti and toss until evenly coated in the sauce.

Emails like this truly warm my heart.

This morning I received a message from Newfoundland and Labrador Public Libraries asking about my books and where I’m from. They’d like to add copies to their collection, including in the area where I grew up.

As someone from the small town of Triton, it’s a pretty special feeling to know that the recipes and stories I’ve been sharing are making their way around the province. I’m still very new to all of this, so moments like these mean a lot.

Thank you to everyone who has supported my books, shared my posts, and encouraged me along the way. Every bit of support helps more than you know.

Sometimes it’s the little things that remind you to keep going.

Let’s be honest — bologna gravy isn’t winning any nutrition awards. It’s made with scrunchions, onion, and bologna, so it’s basically a love letter to cholesterol. Today is the day!

I’m set up at Village Mall from 10 a.m. to 6 p.m. with copies of The Bay Kitchen and my Newfoundland children’s books.

To be honest, I’m feeling a mix of excitement and nerves. Writing these books was one thing, but putting myself out there and sharing them in person is a whole different experience. Still, I’m incredibly grateful to be here and to have the chance to meet readers face-to-face.

If you’re in the area, stop by and say hello. I’d love to chat about Newfoundland cooking, storytelling, or just meet some of the people who have supported this journey.
