Alright, folks, the next Friday sandwich starts with our molasses ham heated up with a little layer of shredded mozzarella in-between. For condiments,we have our Wh***ey Carmalized Onion Bacon Jam, jacked up with a bunch more bacon, a jalapeño relish made with barbs peppers and cucumbers out of Mat and Brianna's garden, a grainy house made mustard, dill pickle, shredded kale (also from Mat and Brianna's garden) and pickled red onion.
Don't let the photo fool you; the kale garden kale is the purple kind we just used green today for the photo 🌿💚💜

$10 + hst

Sandwiches are available, Friday's only, from 11 am til 2 pm or sell out whatever comes first.

Alright, sorry for the late post....

We have the Muffuletta sausage this week, so we thought, why not do a sandwich as well - it's a little bit different because that's how we do it.

Crispy bacon bits, deli ham (warmed up) mozzarella cheese, shredded kale (from the garden) and a olive salad (green/black olives, capers, red onion, green onion, parsley, lemon, spices) and to tie it all in together we have a roasted red pepper, roasted garlic, dijionaise (dijion + mayo).

$10 + hst

We are thinking about hams over here. Are you thinking about next week's Thanksgiving meal?

Aside from the delicious molasses hams pictured here, we also have small turkeys and larger turkeys available for pre ordering as well as stuffed turkey breasts and chickens.

It's really hard to guess what people are going to go for this year, so we won't be having a lot of extra things available. Pre ordering is the move to make sure you get what you want!

These hams are marinated for a week in molasses, juniper, and coriander before they are rinsed, netted, and smoked. They are a beautiful boneless ham that makes amazing diverse leftovers.

Here we go

Sante fe briefly marinated in out sesame ginger marinade with added onions, ginger, and garlic then seared off for toppings we have a kimchi spread (fine chopped up kimchi mixed with sriracha sauce and mayo), mixed picked peppers from barbs garden, a fried wonton chip, sesame citrus coleslaw, green onions from mat and briannas garden and an Asian inspired bbq sauce.

Have you heard of a Momo?

They are the Nepali version of a dumpling.

Our main butcher, Sudeep, is from Nepal, and this sausage is inspired by his family's Momo recipe.

Right now, we have a pork version available at the shop, and Thursday afternoon, we will be making a chicken version to take to the market to try!

We've added a Kitchen member to our team now we are lookingg for a Butcher's Apprentice with a focus on Value Added production.

In this role, you will be responsible for learning about and preparing all of our value added production, including sausages, deli, smoked items and all the other products we make.

You will work along side the breaker and you will also work customer service. (Everyone works customer service at Vessel).

So this week, the kitchen was tasked with using some double smoked bacon that got a little bit too cooked for our standards to sell... so with that I mind, let's go!!!!!

Double smoked bacon cut up into cubes and slow roasted all day, then strained and chilled and mixed with our smokey molasses BBQ sauce, and pureed onions and garlic then then slow roasted for another half a day.... we got some deli turkey and some deli chicken, green onions and kale from the garden, and we have pickled red onions and to tie it all together a deep roasted peppery garlic aioli....
The original thought was something similar to a club house, but what we ended up with I something completely different.

Justin said it's in his top 5 sandwiches.
