When the season turns fresh and bright, we lean in and savour every bite of it.
Peanut Sauce:
1/3 cup peanut butter
2 tbsp low sodium soy sauce or tamari
2 tbsp rice wine vinegar
1 tbsp sesame oil
1 tbsp honey
1 inch piece fresh ginger, grated
2 cloves garlic, grated
2 tbsp water
Salad:
2 large cucumbers, whole
chili oil, for topping
🧑🍳 Whisk together the peanut butter, soy sauce, rice wine vinegar, sesame oil, honey, ginger, garlic, and water until smooth and creamy, adding more water if needed to thin the sauce.
🥒 Spiralize the cucumbers (or use a vegetable peeler to make ribbons if you don’t have a spiralizer), then gently pat them dry with a paper towel to remove excess moisture.
🥗 Toss the cucumbers with the peanut sauce, top with chili oil, and enjoy immediately for a fresh, crunchy, and super refreshing salad.
