Let’s be honest—groceries are expensive right now! One of the absolute best ways to save your budget (and your tastebuds) is to preserve the harvest now so you can enjoy it all winter long.
Yes, it takes a bit of time and effort, but man, do I love cracking open that fresh flavor when it’s freezing outside! ❄️ You’re going to see me posting a lot about canning and preserving on this page because it’s truly a passion of mine. I learned it all from my grandma—we used to spend hours together making chili sauce and other fun things. Those are memories I will cherish forever, and keeping the tradition alive means the world to me. ❤️
Right now, asparagus is at the peak of its season thanks to all this beautiful warm weather! Do yourself a huge favor: visit one of our incredible local farm stands, buy in bulk, and spend an afternoon preping. Not sure how to preserve it? I've got you covered. Freezing is incredibly easy and locks in that beautiful green color and crunch. Here is exactly how to do it:
👩🍳 How to Freeze Fresh Asparagus
1. Wash & Trim
Wash your spears thoroughly in cold water. Snap off the woody bottom ends (they break naturally where they start to get tough). Categorize them by thickness (small, medium, large) so they blanch evenly.
2. Blanching (The Secret Step!)
Don't skip this! Blanching stops the enzymes that cause loss of flavor, color, and texture.
• Bring a large pot of water to a rolling boil and prepare a large bowl of ice water next to it.
• Drop the asparagus into the boiling water.
• Boil times: 2 minutes for small spears, 3 minutes for medium, and 4 minutes for large.
3. The Ice Bath
The second your timer goes off, immediately transfer the asparagus into the ice water using tongs. Leave it in there for the exact same amount of time it boiled to stop the cooking process completely.
4. Dry Thoroughly
Drain the spears well and pat them dry with a clean towel. Excess water causes freezer burn!
5. Flash Freeze & Pack
Lay the dried spears in a single layer on a baking sheet lined with parchment paper. Pop the tray into the freezer for 1 to 2 hours until they are frozen solid (this keeps them from sticking together in one big clump!). Transfer them into vacuum-seal bags or heavy-duty freezer bags, press out all the air, and label with the date.
