And tri-tip is no cheap substitute. Research comparing tri-tip to beef loin found similar fat levels, helping explain why a properly cooked tri-tip can be incredibly juicy and flavourful.
- Cook it low until just under your target temp
- Let it rest
- Sear it over screaming hot heat
- Slice against the grain
- Hit it with Gochu Chimichurri and serve
Ribeye is more tender. No argument there.
