Most people don't know that you can age beef up to 200 days. Crazy huh
Optimal for every day use is 14 -22 days. And you can do this with a couple if steaks it doesn't have to be a whole cow. Temperature is very important. Any time for anything. It should be between 32 and 38 degrees F.

Well. Why haven't I mentioned Beef Jerky Flavors. Good question.
The most popular by far is Teriyaki Maple Peppercorn, Next Sweet Chile Lime. Then Buffalo, and last Honey Garlic. With a bit extra garlic. Good and good for you. The garlic that us. Well in 1 kg of Teriyaki I put just one Cup of Brown sugar. All flavors have some. I find in the smoking process it helps them get a nice glaze. I buy base recipes and then make small batches each slightly different and hand out samples to regular customers toget an opinion as to which one they like best.

I'm not giving out many details about my jerky. I'm working on co-packers, labeling, and packaging, as well as a lot of other things. I've received many great compliments on my products. Once I get things rolling, I'll share real testimonials from my customers, like the lady who bought my jerky for her husband but never shared it with him, knowing he'd be addicted and her jerky would never be safe again.
