Many people ask me, “Is this Ukrainian sauerkraut?”
In reality, sauerkraut itself is not Ukrainian, German, Polish, or Canadian.
Sauerkraut is simply naturally fermented cabbage made using two basic ingredients: fresh cabbage and salt.
When the correct salt ratio and fermentation conditions are maintained, cabbage naturally becomes a true probiotic food. No vinegar, no added water, and no pasteurization.
This traditional method has been used in many countries around the world. The differences are not in the fermentation process itself, but in family traditions and optional ingredients. Some people add carrots, apples, cranberries, caraway seeds, or other ingredients.
There are thousands of variations, and every family and culture prepares it in its own way.
But the foundation always remains the same: cabbage, salt, and natural fermentation.
As a Food Science graduate and professional chef, I deeply respect this traditional and scientifically sound process.
