If you know, you know. And if you don't, allow us to introduce you to halibut cheeks.

One of the most underrated cuts of the fish, halibut cheeks are tender, sweet, and absolutely fantastic with a simple pan sear, a little butter, and a squeeze of lemon.

Case in point: these beauties went straight from the pan onto a bed of rice pilaf.
