Happy Hamburger Day! Skip the ordinary—try our sweet, savory tocino burger!

Patties: Combine 375 g chopped Siwin tocino, 375 g ground pork, ½ cup panko, 2 tbsp apple cider vinegar, 2 tbsp brown sugar, 3 minced garlic cloves, 2 sliced green onions, 1 tsp kosher salt, and 1 tsp white pepper. Mix well, form into 6 patties, and rest 30 min.

Coleslaw: Mix 2 cups prepared coleslaw, ½ cup apple matchsticks, 3 tbsp cilantro. In a bowl, whisk ¼ cup apple cider vinegar, 1½ tbsp sugar, 1 tbsp sesame oil, 1 tbsp sesame seeds, 1 tsp fish sauce, and ½ tsp salt. Toss with slaw.

Sauce: Mix ½ cup mayo, 3 tbsp relish, 3 tbsp banana ketchup, 3 minced garlic cloves, 1-2 tsp chili flakes, ½ tsp salt. Let sit 15 min.

Grill: Cook patties 3-4 min each side to 160ºF. Brush pineapple and onion slices with olive oil, grill 2 min each side.

Assemble: Spread sauce on buns. Add onion, patty, pineapple, avocado slice, and ⅓ cup slaw.

Enjoy! Serves 6.

*Banana ketchup is available in Asian markets or ask your grocer.

Cheesy Potsticker Omelette

If you happen to have 4 or 5 potstickers leftover, it does happen, why not try this savoury breakfast dish. Potstickers are a common breakfast food in South East Asia, Why not combine both Western and Eastern flavours for this great breakfast dish.

Siwin pork and vegetable potstickers* 4 or 5

Large eggs 2
Milk 2 tbsp..
Soy sauce 1 tsp.
Sesame oil 1/4 tsp.
Pepper 1/8 tsp.

Shredded cheddar cheese 2 tbsp.
Thinly sliced green onions 1 tbsp.

Shredded cheddar cheese 2 tbsp.

Chili Crisp**, optional 1-2 tbsp.
Micro greens 2 tbsp.

In a small pan, about 7-9 inches, cook the potstickers according to package directions. Making sure all the water has evaporated. Lower the pan to medium-low.

While the potstickers are cooking, in a small bowl, whisk together the eggs, milk soy sauce sesame oil, and pepper, until well combined and frothy. Stir in the cheese and green onion.

Once the pan has cooled, pour the egg mixture directly over the potstickers in the pan, making sure they are evenly spaced.

Cook gently stirring occasionally for about 3 minutes, until the eggs start to set. Add a lid and cook for another 2-3 minutes, until the eggs are mostly set. Turn the heat down to low and remove the lid. Sprinkle on the second amount of cheese and cover again. Cook another 1-2 minutes, until melted and the eggs are full set.

Slide onto a plate, or eat the omelette straight from the pan. Top with chili crisp and micro greens.

Serves 1

*Or which ever Siwin potsticker you have in the freezer

**If you don’t have chili crisp you can always add 1-2 tsp. of sriracha sauce, or as much or as little as you want.

Tosino Breakfast in a Mug
"This Victoria Day, spend more time outdoors and less on a busy breakfast. Whip up a quick tocino breakfast in a mug—just a few minutes in the microwave, and you're ready to go!
Butter 1 tbsp.

Large egg 1
Milk 3 tbsp.
Salt and Pepper pinch

Bread, stale, cut into pieces 1 cup
Cooked pork tosino 3 tbsp.
Chopped spinach 3 tbsp.
Grated cheddar cheese 2 tbsp.

In a large coffee mug, about 312 mL to 400 mL or 1 ¼ to 1 ½ cups, add the butter. Microwave on high until melted, about 30 seconds. To the mug add the egg, milk, salt and pepper. Mix well until the egg and milk are well incorporated. Add the next 4 ingredients and mix well. Let stand for 1 minute.

Microwave the mug on high for 1 minute and 30 seconds or until the edges are coming away from the edge of the mug. Remove from microwave and serve hot.

Serves 1

"Get ready for Pizza Party Day on the 15th! Try this delicious pizza topped with longaniza sausage and leeks—just like we dreamed of. Check out the recipe below and treat yourself!



Caramelized Leek and Loganisa Garlic Pizza
When this pizza is made, any day is pizza day! A great pizza when spring is around the corner, with it’s leeks, garlic sauce and longanisa. If you want you can substitute a third of a package of skinless or sweet longanisa.

Garlic Sauce:
Olive oil 2 tbsp.
Garlic cloves, minced 8
All purpose flour 2 tbsp.
Milk 1 cups
Onion powder ½ tsp.
Salt ½ tsp.
White pepper ¼ tsp.
Grated Parmesan cheese ¼ cup

Pizza:
Olive oil 2 tbsp.
Sliced leeks 2/3 cups
Shredded Brussel sprouts 1 cup
Shaved?
Fresh pizza dough 1 lb.
Or frozen thawed
Longanisa sausages, sliced 6
Grated Swiss cheese 1 ½ cups

For the garlic sauce:
In a small sauce pan, heat oil over medium heat. Add garlic and sauté for 1 minute until fragrant. Reduce heat to low and mix in the flour. Cook for 2 minutes, stirring constantly. Slowly, pour in milk, whisking constantly until well incorporated and smooth. Stir constantly until slightly thickened.
Stir in well the next three ingredients. Remove the sauce pan from the heat and stir in the Parmesan until melted and well incorporated. Set aside.

For the pizza:
Heat second amount of olive oi in a medium fry on medium. Add the leeks. Saute for about 8-10 minutes until soft, stirring constantly. Add the Brussel sprouts and cook for another 3-4 minutes, until the sprouts are slightly wilted, Set aside.

Stretch out pizza dough into about 12’ round. Place on a prepared baked sheet. Dock the pizza dough, but not all the way through. Spread the garlic sauce all on the dough leaving a ½ inch for the crust. Top the pizza with the leek mixture, followed by slices of the longanisas and finally the Swiss cheese.

Bake in a 450ºF oven for 16-18 minutes, until the crust is golden and cheese is melted and starting to brown. Allow to cool for 5 minutes. Cut into 8 slices

Honey Dijon Longanisa Sheet Pan Dinner

This sheet pan dinner is almost like a hash, but we only cut the potatoes in half only if necessary. Not much other than cutting, whisking a dressing and tossing to combine the flavours. Easy! Feel free to use your favourite sweet or spicy longanisas.

Baby potatoes, cut in half if large 1 lb.
Olive oil 1 1/2 tbsp.
Chopped fresh herbs 1 tbsp.
use what you have on hand, rosemary, parsley, thyme, etc
Salt 1 tsp.

Liquid honey 1/3 cup
Dijon mustard 1/4 cup
White wine vinegar 1 tbsp.
Chopped fresh herbs 1 tbsp.
Salt 1/4 tsp.
Black pepper 1/4 tsp.

Longanisa, cut into 1/2 inch pieces 1 package
375 grams
Cut peppers, 1 inch pieces 1 cup
any colour
Half moon sliced zucchini, 1/4 inch 1 cup
Broccoli, cut into bite size florets 1 cup
Chopped red onion, 1/2 inch 1/2 cup

Heat oven to 425ºF. On a prepared large bake sheet, toss the first 4 ingredients on the bake sheet. Ensure that any potatoes that are cut are face side down, and spread out in a single layer. Roast in oven for 20 minutes.

While the potatoes are roasting, whisk the next six ingredients together in a small bowl until well combined Add the next 5 ingredients into a medium and toss with half the dressing. Remove the potatoes from the oven when time, and push to one side of the pan. Add the longanisa mixture to the pan, making sure it is also in one layer. Roast for 20 minutes. Remove from oven and toss everything with the remaining dressing. Roast for another 6-8 minutes, until everything is roasted through. Remove and serve
