Producer’s Tasting Notes
Nose: Campfire ember and smoked oysters waft across a backbone of lighter malts and bright fruit.
Palate: Peat is prominent on the palate, rounded by the backbone of oak and grain.
Finish: The finish furthers the fervour, unabashed and unrelenting until the next sip.

This small batch is an exceptional whisky for every celebration!

On the Nose: The first aromas that greet you when you open the bottle are reminiscent of orchard fruits on the nose, particularly apple and pear. Subtle sweetness lingering that makes your mouth water.

Tasting notes: As you take your first sip, Creamy mouthfeel initially hit the tongue. Your taste buds are coated in deep, luscious, salted caramel. Subtle notes of soft honey, vanilla cream & sweet oak come through, adding a layer of warmth and complexity.
The finish lingers with a gentle spark of subtle pepper spiciness and a whisper of sweet fennel that dries your mouth and warms your chest.

Released at a natural, high cask strength (56.5% or 57.6% ABV depending on the batch), it features rich notes of dried fruits, dark chocolate, baked apple, and subtle, mature oak.

We’ve taken our signature triple distilled Innisfail Whisky that’s been aged in different casks (American oak, French oak, new and used) and blended it with a unique Sherry Cask finished Innisfail Whisky.

This blend delivers huge notes and a flavour profile that is slightly sweet with a nutty and fruity finish.
