Garlic is my favorite crop to grow, it is a crop that is planted in the fall and harvested the following summer. Once planted, all you can do is hope that the individual cloves survive the winter ahead, and yield a large bulb. Prior to harvest, the plants send up a seed bulb, called a scape. The stems of the scapes are edible, a delightful milder version of the bulb growing (hopefully) below ground. These stems are best harvested just as they make a curl, while nice and tender. They make wonderful pesto or added to any recipe as a garlic replacement.
Removing these scapes, allows the plant to direct the energy to the bulb below rather than growing garlic seeds (bubils) in the scape head.
Below are the varieties we have in the garden this year, a few of which will be unavailable for sale this year as we're building our seed stock for future harvests.
DUGANSKI-
Mid-season, Purple Stripe type. A stunningly beautiful garlic with large bulbs and an amazing flavor that matches its looks and size. Purple outer wrappers protect the violet-tinged cloves that burst with a fiery flavor and mellow out with a pleasant aftertaste. Averaging 5-6 cloves per bulb.
PURPLE RUSSIAN-
Mid-season, Marbled Purple Stripe type. This exceptionally reliable garlic produces beefy heads with 6-8, stout cloves. White wrappings cover the heads, and the buff-skinned bulbs are streaked with shocking purple. A warming, mellow flavored garlic that tastes great raw or roasted. Itβs easy to peel and boasts a long shelf life!
RUSSIAN RED-
Mid-season, Rocambole type. If a flavor-forward garlic is your jam, then this heirloom will suit you very well. Spicy, medium-hot and enduring when raw, the taste is all strong garlic with a subtly sweet aftertaste when cooked. Very cold-hardy and productive, the plants deliver big, colorful, reddish-purple blushed and striped heads with easy-to-peel cloves. Averaging 5-6 cloves per bulb
MUSIC-
Mid-season, Porcelain type. Music hits the top of the charts when it comes to yields. White skinned with just a blush of pink, this garlic makes big cloves that are easy to peel. The taste is a medium hot, true garlic flavor. Exceptional shelf life for a Porcelain type, Music will store 9 months to a year. Very cold tolerant. Averaging 3-4 cloves per bulb, with some producing 2 massive cloves!
UKRANIAN-
Mid-season, Rocambole type. Ukrainian Red boasts a flavor as rich as its history. Big, beautiful heads are wrapped in white skins and open to reveal 7β10 plump cloves with very easy-to-peel, tan skins. We love the robust, well-rounded flavor thatβs spicy when raw and mellow after cooking.
NEWFOUNDLAND-
Mid season, Rocambole type. 6-7 plump Easy to peel cloves per bulb. Newfoundland has a well rounded and rich flavor, with reasonable heat that tapers. It is more tolerant to higher Humidity during storage than most varieties, and will store well for 5 months.
BOGATYR-
Mid season, Marbled purple stripe type. Bogatyr garlic are small, averaging 5 centimeters in diameter. Its bulb wrappers are thick and parchment-like with white skin showcasing purple and violet stripes. As you peel away the outer wrappers, the purple striping intensifies, becoming almost a solid mix of purple hues surrounding the cloves. A single bulb will house 5 to 6 plump cloves. The peeled cloves are creamy white and dense. Bogatyr garlic is known for its fiery, raw heat that diminishes quickly to a mild and pleasant flavor.
GERMAN MENNONITE-
Mid season, Porcelain type. Originating from a German Mennonite colony in Ontario, It has a bright white outer wrapper and light purple skin. It produces large to Jumbo bulbs with 4-6 (sometimes 7) easy to peel cloves. Mennonite has a strong and robust flavor when raw, but becomes sweet and mild when cooked. It is excellent for roasting due to its size and the easy clove extraction.
