Recipe : Blueberry Muffins
Ingredients (Makes 12 muffins)
* 2 cups (250 g) all-purpose flour
* 2 tsp baking powder
* ¼ tsp salt
* ¾ cup (150 g) granulated sugar
* 1 tsp vanilla extract
* 2 large eggs
* ½ cup (120 ml) milk
* 7 tbsp (100 g) unsalted butter, melted
* 1½ cups (200 g) fresh or frozen blueberries
* 1 tbsp flour (for coating the blueberries)
Instructions
1. Preheat the oven to 350°F (180°C). Line a 12-cup muffin pan with paper liners.
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
3. In a separate bowl, whisk the eggs, then add the milk, vanilla, and melted butter.
4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
5. Toss the blueberries with 1 tablespoon of flour and carefully fold them into the batter.
6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
7. Bake for 20–25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
8. Let the muffins cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
Optional Crumb Topping
* 40 g (⅓ cup) all-purpose flour
* 30 g (2 tbsp) granulated sugar
* 30 g (2 tbsp) cold unsalted butter
Rub the flour, sugar, and butter together with your fingertips until crumbly. Sprinkle over the muffins before baking for a delicious bakery-style finish.
Tip: Fresh or frozen blueberries work equally well. If using frozen blueberries, do not thaw them before adding to the batter.
