If you ever get bored of eggs for breakfast like me, give these creamy steel cut oats a try! 🥣
1 cup of steel cut oats
3 cups of water
1 cup of milk (I used 2%)
1 tsp vanilla bean paste (or pure vanilla extract)
1 tsp cinnamon
1/4 tsp salt
1. In a medium size saucepan, bring the water, milk, cinnamon, salt, and vanilla (or vanilla bean paste) to a boil over high heat. Add your oats, and simmer for 20 minutes or until the milk thickens around the oats. Carefully watch this mixture so it doesn’t boil over, stir every 5 minutes or so to prevent sticking.
2. While the oats are cooking, in a small pan, add 1 tbsp butter of medium heat, then add cashews and toast until golden brown, around 5-10 minutes. I used about 1/4 cup. Remove from heat then roughly chop.
3. When the oats are finished, they will look thickened. Add to your favourite bowl, then add a splash of milk, top with toasted cashews, fresh raspberries, and a drizzle of maple syrup. Best enjoyed with a cup of coffee in the sun ☀️
