In an effort to keep this event a quality experience for our guests we have made the decision to close ticket sales. Thank you so much to everyone who has purchased, shared, and is excited to come - we want to make sure the wine continues to flow and the food is hot for those attending. Cass&Nat Event Planning and I (Outpost - Fine Wine Spirits Beer) are so grateful for the support and have seen a 100 ticket increase in just 7 days. We have over 400 wine lovers coming out and we will be sure to look at expansion options for next year.

Nova Scotia — Canada’s Maritime Wine Region

This post is especially sentimental to me as I started my wine journey at Blomindon estate Winery in Canning, Nova Scotia. Not only did I find my passion, I found that no one is ever mad at a winery. Its too classic, too relxing. Vineyards are often a space that the weight of the world seems to lift off your shoulders. I am so grateful to Nova Scotia and the people I met there for this experience and help finding my passion.

If British Columbia is Canada’s mountain wine region and Ontario is Canada’s lake-influenced wine region, Nova Scotia is unquestionably Canada’s maritime wine region.

Located on a peninsula surrounded by the Atlantic Ocean, Nova Scotia’s vineyards are never far from the sea. The Bay of Fundy—home to the highest tides on Earth—plays a critical role in moderating temperatures throughout the growing season. Wine Wednesday: An Introduction to Canadian Wine

When most people think of great wine regions, they think of France, Italy, Spain, or California. Yet some of the most exciting wines being produced today are coming from much closer to home. Canada's wine industry may be young by global standards, but it has quickly earned an international reputation for producing wines defined by freshness, balance, and vibrant acidity.

Modern Canadian wine is built around three major regions: British Columbia, Ontario, and Nova Scotia. Each region has its own climate, geography, and winemaking traditions, creating dramatically different styles despite sharing a cool-climate identity.

British Columbia's wine story began in 1859 when Father Charles Pandosy planted the first vineyard near Kelowna in the Okanagan Valley. Today, British Columbia is Canada's most geographically diverse wine region, stretching from Vancouver Island to the Similkameen and Okanagan Valleys. The province is known for world-class Riesling, Chardonnay, Pinot Noir, Syrah, and increasingly impressive Bordeaux-style reds. The combination of abundant sunshine, dry conditions, and cool nights produces wines with both intensity and freshness.

Ontario is Canada's largest wine-producing province and home to the country's most famous wine export: Icewine. What unites these regions is not warmth, but balance. Canada's best vineyards sit at the edge of what is possible for grape growing. 1: Start with the protein - haddock fish, a light white meat with high omega 3 fatty acids. The tannins in red wine react poorly with the 03’s and create a metallic, more astringent character that is generally disliked. Stay away from red in general or go to a rose if you absolutely cannot stand white. The bread coating on the fish will help soften all flavours so any accompaniment is softened slightly.

2: Now look at the sauce and accompaniment - in this case I had a chipotle aioli, cabbage slaw, and fresh lime. It’s not as spicy as I thought it would be, I think next time I would opt for siracha.

Now what do we pick?

1 - SAFE CHOICE - Sauvignon Blanc thats not from New Zealand. NZ sauv blanc is too aromatic and fruity. White fish, even with the breading, needs something simple and leaning more towards the savoury grassy and herbaceous notes versus fruit.

I chose The Drover SB from Australia. $13.50/bottle. Lemon, cantaloupe, and fresh green grass.

A fun choice would be an Albariño. It has a similar savoury profile to Sauv Blanc, but has a bit more of a lime character versus lemon.

I chose Abellio Albariño from Spain. I was pleasantly surprised with the brightness just a few weeks ago and so happy to have a great pairing to showcase it $22.99

Does that aioli have some heat? Go with a light white or rose showing a teeny hint of sweetness.

I chose Morraine Winery Pink Mountain. 100% Grenche Noir and showcases notes of guava and passion fruit. Its a bit fruity, but it would match that fresh lime juice and balance a good spicy aioli fantastically. $22.99 and 100% Canadian.

Wine Knowledge Wednesday!

Another bright and sunny day - FINALLY it looks like we're moving past the precipitation. Over the past few weeks we've explored how temperature influences wine from the vineyard to the cellar. We've looked at how climate affects grape ripening and acidity, and how fermentation temperatures help shape a wine's aromas and flavours. This week, we'll finish the journey at our favourite finish - the glass.

The temperature at which wine is served has a profound impact on how we perceive flavours, aromas, texture, and balance. In many ways, serving temperature acts like a volume k**b. It doesn't change the wine itself, but it can amplify or mute different characteristics.

When a wine is served too cold, aromas become less volatile and more difficult to smell. Fruit flavours can seem muted, while acidity and tannin become more pronounced. A red wine served directly from the refrigerator may feel hard, angular, and closed off. Even a white wine can lose some of its complexity if it is served ice cold. The wine may appear refreshing, but many of its more subtle aromas remain hidden. This is because aroma molecules have weight to them and when cold they shrink (like most materials), becoming more dense, and fall back to the surface of the glass.

At the other extreme, wine served too warm often feels less refreshing and less balanced. Alcohol becomes more noticeable, fruit flavours can seem overly ripe, and acidity appears softer. A wine that might normally feel vibrant and elegant can become heavy or cumbersome when served several degrees warmer than intended. This is particularly noticeable with full-bodied reds, where excess warmth can make alcohol the dominant impression.

The ideal serving temperature allows a wine's fruit, acidity, texture, and aromatic complexity to work together. Rather than emphasizing one component over another, proper temperature reveals balance. This is one reason why many wine professionals serve white wines slightly warmer than most consumers expect and red wines slightly cooler than room temperature. The goal is not to follow a rule, but to show the wine at its best.

This is also why lightly chilling certain red wines can be so rewarding, particularly during the summer months. Wines with lower tannin, bright acidity, and fresh fruit flavours often become more refreshing when served around 12–16°C. Pinot Noir, Gamay, Frappato, Schiava, and many lighter Grenache-based wines can take on an entirely different personality with a slight chill. Their fruit becomes more vibrant, their acidity more refreshing, and their structure more precise.

Perhaps the most important lesson from this series is that temperature influences wine at every stage of its life. It shapes the vineyard, guides fermentation, and ultimately affects what we taste in the glass. A few degrees may seem insignificant, but they can be the difference between a good bottle and a memorable one.
