Red Apple Balsamic Chicken with Caramelized Apples
Serves 4 | Prep: 10 minutes | Cook: 20 minutes
Sweet, savory, and beautifully balanced, this easy skillet chicken brings together the rich, buttery flavor of butter-infused olive oil with the bright, fruity sweetness of red apple balsamic. Caramelized apples make it an especially delicious dish for fall.
Ingredients
* 4 boneless, skinless chicken breasts or thighs
* 3 tbsp butter-infused olive oil, divided
* Salt and freshly ground black pepper, to taste
* 1 large red apple, thinly sliced
* 1 small shallot, thinly sliced
* 3 tbsp red apple balsamic
* 1 tsp Dijon mustard
* 1 tsp fresh thyme, plus extra for garnish
* ¼ cup chicken broth
* Optional: ¼ cup toasted walnuts or pecans
Directions
1. Season the chicken. Pat the chicken dry and season both sides with salt and freshly ground black pepper.
2. Sear the chicken. Heat 2 tablespoons of the butter-infused olive oil in a large skillet over medium-high heat. Add the chicken and cook for approximately 4–5 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and keep warm.
3. Caramelize the apples. Reduce the heat to medium and add the remaining tablespoon of butter-infused olive oil. Add the sliced apple and shallot. Cook for 3–4 minutes, stirring occasionally, until the apple begins to soften and lightly caramelize.
4. Make the sauce. Add the red apple balsamic, Dijon mustard, thyme, and chicken broth. Stir well, scraping up the flavorful browned bits from the bottom of the skillet. Allow the sauce to simmer for 2–3 minutes, until slightly reduced and glossy.
5. Bring it together. Return the chicken to the skillet and spoon the apples and red apple balsamic sauce over the top. Simmer for another 1–2 minutes to allow the flavors to come together.
6. Serve. Garnish with fresh thyme and toasted walnuts or pecans, if desired. For an extra touch of buttery flavor, finish with a light drizzle of butter-infused olive oil just before serving.
