De quoi s’agit-t-il?
Le symbole nutritionnel est une aide visuelle développée par Santé Canada dans le but de soutenir le consommateur pour faire des choix rapides et éclairés lorsqu’il fait son épicerie. Le symbole facilite l’identification des aliments à teneur élevée en nutriments préoccupants pour la santé publique, soit les gras saturés, les sucres et le sodium.
Le symbole doit figurer en noir et blanc, généralement dans la moitié supérieure du devant de l’emballage, afin d’être clairement visible. Toutefois, sur les emballages qui sont plus larges que haut, le symbole doit figurer dans la moitié droite de l’emballage.
Pourquoi?
Parce qu’une alimentation élevée en sucres, en sodium et en gras saturés est un FACTEUR DE RISQUE MAJEUR pour l’obésité, les maladies du cœur et le diabète.
Le compte à rebours a commencé. L’industrie alimentaire a jusqu’au 31 décembre 2025 pour ajouter un symbole nutritionnel sur les étiquettes des aliments riches en nutriments préoccupants pour la santé publique, à savoir les gras saturés, les sucres et le sodium.
Le symbole nutritionnel s’applique à…
Le symbole nutritionnel est requis sur la plupart des aliments préemballés dont la teneur en gras saturés, en sucre et/ou en sodium est supérieure à 15 % de la valeur quotidienne.

Autres seuils
 10 % de la valeur quotidienne pour les aliments que nous consommons généralement en petites quantités, c.-à-d. ceux avec une quantité de référence de 30 g or 30 ml ou moins, comme les barres céréalières, les craquelins, les biscuits et les condiments (ketchup, moutarde, sauce BBQ, etc.)
 30 % de la valeur quotidienne pour les plats principaux préemballés dont la quantité de référence est:
o 170 g ou plus (destinés exclusivement aux enfants de 1 à 4 ans uniquement)
o 200 g ou plus (destinés aux enfants et/ou aux adultes)
Innovation?
Pas vraiment. Bien qu’il s’agisse d’une nouveauté au Canada, plusieurs pays utilisent déjà des symboles similaires pour aider leurs populations à améliorer leurs habitudes alimentaires.
En 2016, le Chili a été le premier pays en hémisphère occidental à mettre en place un étiquetage nutritionnel obligatoire sur le devant des emballages.
Depuis, Israël, le Pérou, le Mexique, l’Uruguay, le Brésil et l’Argentine ont mis en place un étiquetage similaire.
L’étiquetage nutritionnel volontaire sur le devant des emballages est également en place au Royaume-Uni, en France, en Australie et en Nouvelle-Zélande.
Impact
Des études menées en 2020 ont estimé que les symboles nutritionnels sur le devant des emballages ont contribué à la réduction de 37 % des achats de sodium et de 27 % des achats de sucre au Chili.
En Nouvelle-Zélande, le programme volontaire Pick the Tick a permis d’éliminer 33 tonnes de sel de l’approvisionnement alimentaire en un an grâce à la reformulation des produits.
En Finlande, depuis le début des années 1990, une étiquette d’avertissement doit être apposée sur les produits à forte teneur en sel. Depuis la mise en œuvre de cet avertissement et d’autres politiques connexes, la teneur en sel des aliments étudiés a diminué de 20 à 25 %.

What is it about?
The nutrition symbol is a visual aid developed by Health Canada to help consumers make quick and informed choices when shopping for groceries. The symbol facilitates the identification of foods high in nutrients of public health concern, namely saturated fat, sugars and sodium.
The symbol must be in black and white, usually in the upper half of the front of the package, in order to be clearly visible. However, on packages that are wider than they are tall, the symbol must appear in the right half of the package.
Why?
Because a diet high in sugars, sodium and saturated fat is a MAJOR RISK FACTOR for obesity, heart disease and diabetes.
The countdown has begun. The food industry has until December 31, 2025 to add a nutrition symbol to the labels of foods rich in nutrients of public health concern, namely saturated fat, sugars and sodium.
The nutrition symbol applies to...
The nutrition symbol is required on most prepackaged foods that are greater than 15% of the daily value in saturated fat, sugar and/or sodium.

1. 10% of the Daily Value for foods that we typically consume in small amounts, i.e., those with a reference amount of 30 g or 30 mL or less, such as granola bars, crackers, cookies, and condiments (ketchup, mustard, BBQ sauce, etc.)

1. 170 g or more (intended exclusively for children 1-4 years of age only)

Innovation?
Not really. Although this is a novelty in Canada, several countries are already using similar symbols to help their populations improve their eating habits.
In 2016, Chile was the first country in the Western Hemisphere to implement mandatory front-of-package nutrition labelling.
Since then, Israel, Peru, Mexico, Uruguay, Brazil and Argentina have implemented similar labelling.
Voluntary front-of-package nutrition labelling is also in place in the United Kingdom, France, Australia and New Zealand.
Impact
Studies in 2020 estimated that front-of-package nutrition symbols contributed to the 37% reduction in sodium purchases and 27% in sugar purchases in Chile.
In New Zealand, the voluntary Pick the Tick program eliminated 33 tons of salt from the food supply in one year through product reformulation.
In Finland, since the early 1990s, a warning label has been required to be affixed to products with a high salt content. Since the implementation of this warning and other related policies, the salt content of the foods studied has decreased by 20-25%.

Every summer, Canadians are reminded that fresh produce, while essential to a healthy diet, can also pose food safety risks. This year’s Cyclospora outbreak in the United States has already sickened more than 1,600 people, making it one of the largest in recent memory. Yet despite its scale, investigators have not identified the specific fruit, vegetable, farm or supplier responsible. Canada’s food regulators have appropriately resisted calls to suspend produce imports because there is simply no scientific evidence pointing to a particular commodity or country of origin. From a regulatory standpoint, that is the right decision. From a communications standpoint, however, we have an opportunity to do much better.

Food safety agencies have become remarkably sophisticated at tracing pathogens through increasingly complex supply chains, but when it comes to communicating uncertainty, many are still relying on a model designed for another era. Press releases and media interviews remain the primary tools for informing the public, even though most Canadians now consume information through search engines, social media and increasingly through artificial intelligence. The way people seek answers has changed dramatically, but the way governments communicate risk has barely evolved.

Cyclospora presents a particularly difficult communication challenge because consumers have very little control over their own exposure. Unlike bacterial outbreaks involving foods that can be cooked, this parasite is commonly associated with fresh produce that is eaten raw. Washing leafy greens or herbs offers only limited protection, and by the time illnesses are reported, the contaminated products have usually disappeared from store shelves. Add an incubation period that often exceeds a week, and consumers are left trying to remember meals they barely recall eating. Public health officials therefore face a difficult balancing act. Warn too aggressively and consumers may avoid fresh produce altogether, unnecessarily harming growers, distributors and retailers. Say too little, and the public may conclude that authorities are withholding information.

One of the biggest shortcomings of current risk communication is its lack of precision. When headlines mention “leafy greens,” most consumers do not distinguish between romaine lettuce, spinach, kale, arugula or mixed salads. They simply avoid the entire category. Behavioural economists have long recognized this as a spillover effect: one product’s problem becomes everyone else’s problem. The result is collateral economic damage extending far beyond the actual source of contamination, often affecting producers who had absolutely nothing to do with the outbreak. This is precisely why communication matters as much as epidemiology.

Artificial intelligence offers an opportunity to fundamentally rethink how food safety information reaches consumers. Imagine asking your AI assistant whether spinach is implicated in the current outbreak and receiving a clear, evidence-based response explaining that no such link exists, while also describing what investigators do know and what remains uncertain. If a specific imported herb were eventually identified, consumers could receive targeted guidance immediately instead of vague warnings that leave them guessing. Rather than relying on generalized announcements that inevitably fuel confusion, regulators could provide personalized, real-time answers based on verified data, reducing unnecessary panic while improving public confidence.

The Canadian Food Inspection Agency has earned an international reputation for scientific excellence. Its inspectors, laboratories and traceability systems are among the best in the world. The next frontier is not simply improving detection; it is modernizing communication. Instead of issuing static recalls and occasional updates, regulators should develop dynamic, AI-ready information platforms capable of distinguishing between products that are confirmed sources of illness, products that remain under investigation and products for which there is no evidence of concern. Just as importantly, agencies should become more comfortable communicating uncertainty. Telling Canadians, “We don’t yet know, but here’s what we’re doing,” is far more credible than offering broad reassurances that can quickly unravel as new evidence emerges.

Food safety has always depended on science. Increasingly, it will also depend on trust. In an era where artificial intelligence is rapidly becoming the public’s first source of information, regulators must ensure that trustworthy, evidence-based guidance reaches consumers before speculation and misinformation do. The future of food safety will not be defined solely by faster laboratory testing or more sophisticated traceback investigations. It will also be defined by our ability to communicate risk with the same precision as the science itself.
