Some of the most important work happens long before there’s whisky in the cask.

Every year, we head out to Elmira to harvest and prepare wood for future cask construction and repair. It’s a quieter part of the process, but it’s a big part of how we stay connected to the craft from the very beginning.

We spent the day measuring, cutting, and stacking wood that will eventually help shape the whisky we make.

Quality comes from knowing the details firsthand. From the grain we choose, to the spirit we distill, to the casks we build, repair, and rely on, every part of the process has a role to play.

Especially the parts most people never see.

Old Fashioned, but make it ice cream. 🥃🍦

Here’s the scoop, this month we teamed up with our friends at .to for a feature flavour made with John Sleeman & Sons rye, bitters, candied orange zest, and caramel.

Good Behaviour took us behind the scenes to see how it’s made, from the first pour to the final scoop, and we can confirm: it tastes as good as it sounds.

Launching June 1st in cones and pints at all Good Behaviour locations.

Consider this your official excuse to go for ice cream.

Spring Migration, but make it a cocktail.

Bright, bitter, floral, and built for that first real stretch of patio weather.

Spring Migration is refreshing without being too sweet, citrusy without being too predictable, and exactly the kind of drink we want in hand as the weather starts to warm.

🌿 1.5 oz John Sleeman & Sons Gin
🌿 0.5 oz St-Germain
🌿 0.75 oz Campari
🌿 2 oz grapefruit juice
Garnish with fresh grapefruit wheel

Shake with ice, strain, and garnish with grapefruit.

This might be our most Guelph history rabbit hole yet...

Guelph once had streetcars. And naturally, George Sleeman was somewhere in the middle of it.

In the 1894/95, he helped bring electric streetcars to the Royal City, connecting people across town and linking Silvercreek Brewery to the heart of Guelph.

The line stopped running in 1937.
The tracks were pulled up, paved over, or forgotten.

But the streetcars? We have a hard time believing they simply vanished.

So, we did what any reasonable whisky company would do.

Some drinks start in a lab or brewhouse, this one started with a...salad?

Our Watermelon & Mint Vodka Soda was inspired by a watermelon and mint salad Cooper’s wife made one summer.

We left out the feta, and kept the best parts: juicy watermelon, bright mint, vodka, soda, and only 1 gram of sugar!

As the seasons shift, we like to take a moment to reflect on the one before it. The wins, the challenges, and where there’s still room for growth. And so far, 2026 has given us so much to be grateful for.

We’ve filled 31,550 bottles and 118 casks, Cooper has travelled to five provinces, we released our first ever Irish whisky (Which quickly sold out), and we’ve been honoured with 14 awards,

This year is only just beginning and we can’t wait to share more fabulous drinks and stories with you.
