Some of the most important work happens long before there’s whisky in the cask.
Every year, we head out to Elmira to harvest and prepare wood for future cask construction and repair. It’s a quieter part of the process, but it’s a big part of how we stay connected to the craft from the very beginning.
We spent the day measuring, cutting, and stacking wood that will eventually help shape the whisky we make.
Quality comes from knowing the details firsthand. From the grain we choose, to the spirit we distill, to the casks we build, repair, and rely on, every part of the process has a role to play.
Especially the parts most people never see.
