Fall weather calls for fresh flavours that bring everyone to the table 🍂 And nothing does that quite like delicate, buttery Atlantic Sea Scallops, caught by our vessels. Here are four tips for cooking them to perfection:

✅ Pat your scallops dry: Before cooking, use a paper towel to remove as much moisture as possible.

✅ Heat the pan first: Place a skillet over medium-high heat and let it get hot before adding oil. A hot pan is the key to achieving that perfect caramelized sear.

✅ Don't overcrowd the pan: Leave space between each scallop so they sear instead of steam.

✅ Let them sear: Cook for about 2–3 minutes per side, resisting the urge to flip too early. Once a golden crust forms, turn them over and cook until just opaque in the centre.

📢 Remember: Scallops cook quickly. Overcooking can make them tough and rubbery, so remove them from the heat as soon as they're opaque and lightly firm to the touch.
