Our yearly cider collaboration with our friends at West Avenue Cider () is now back on draught in our taproom.

๐˜ž๐˜ฆ๐˜ด๐˜ต๐˜ธ๐˜ข๐˜ณ๐˜ฅ ๐˜๐˜ฆ๐˜ข๐˜ณ๐˜ต๐˜ด cider is a continuation of our love for Basque country and Normandy ciders โ€“ rustic, bold and bone-dry from the ciderโ€™s year-long rest in our repurposed saison barrels.

This yearโ€™s cider is a blend of Yarlington Mill, Dabinett, Porterโ€™s Perfection, Bulmerโ€™s Norman and Calville Blanc dโ€™Hiver apples.

With our house yeast and barrel character, ๐˜ž๐˜ฆ๐˜ด๐˜ต๐˜ธ๐˜ข๐˜ณ๐˜ฅ ๐˜๐˜ฆ๐˜ข๐˜ณ๐˜ต๐˜ด has a soft honey-apple nose, with a mineral-lime acidity and delicate Brettanomyces funk. Its perceived sweetness belies its bone-dry finish.

A reminder that our friends from Therianthropy () will be popping up at our taproom this evening (Thursday, June 4) from 5 pm until close to pair wines with our dishes.

Like our beer, Therianthropy wines celebrate the art of low- to no intervention methods, embracing organic and biodynamic farming and wild yeasts in the process.

The result is highly drinkable, unpretentious wines that have become a mainstay on our menu.

This Thursday, June 4, weโ€™re excited to welcome sommelierTim Reed Manessy from Therianthropy Wine () for an evening of good food and drink.

Tim will be on hand during our dinner service to pair wines with our dishes and chat with our guests. Weโ€™ll also have a broader selection of Therianthropy wines available to go.

Therianthropy is a micro-negociant winery based in Niagara, Ontario. Theyโ€™re best known for crafting low-intervention wines driven by freshness and vibrancy โ€“ without the influence of oak, additives or high-tech winemaking methods.

We love how Therianthropy uses organic grapes whenever possible, allowing the unique terroir of each vineyard to shine. The end result is highly drinkable, unpretentious wines that have become a mainstay on our menu.
