We had the pleasure to keep our neighbours' Clydesdale horses for a few weeks, and safe to say these gentle giants settled right in.

Ever tried a reverse sear? It’s a great method for cooking grass-fed beef, to avoid drying the leaner meat.

Here’s how we’d do it:

Low oven first at 225 degrees until the internal temperature hits 130. Rest it, then sear it hard in a hot pan until you've got a crust on all sides.

Dutchie's fully recovered!

When this foal was born in the spring, his front leg tendons needed attention and he was very wobbly on his feet.

It took some work between us and the vet to get it right, but he's come through it strong and made a full recovery.

Next up is training him, then finding him a good home.

Beef carpaccio tenderloin cured in juniper, cocoa and salt, before being seared and rolled.

Thinly sliced and served with truffled shallot vinaigrette and pickle scapes and sunchoke chips.

Simple and delicious.

Ah, the dog days of summer.

It's been a great and busy season here at Beverly Creek Farms. Healthy animals, lush green fields, and long satisfying days.

Hard to beat a rack of lamb on a Sunday.

Salt, pepper, hot oven, and they’re done in under half an hour.

Rest it before you slice and you get this beautiful pink centre with crispy fat on top, and a clean, rich flavour.

2-3kg (4.4–6.6 lbs) birds raised slowly on open pasture. The best tasting chicken you've ever had. You can hold us to that!

We recently finished cementing the floor in the covered barn.

Flat, dry, and mud-free makes it a lot more comfortable for the cattle to walk on and rest.

The herd is free to come and go between here and the pastures. But in the summer this is where they head when they want to get out of the sun.

With stacks of fresh hay, it’s safe to say they approve!
