Our crew has brought the heat all summer—now it’s time to chill!
We’ll be closed Wednesday, October 14th to treat our hardworking staff to an evening out and a little time to kick back together. After a busy summer and an especially busy few weeks, they deserve a chance to unwind. We’re so grateful for everything they do!

One of my favorite parts about this amazing smokhouse is the R and D!
Meat suppliers know we create a great product and will bring in products for us to try and give feedback on.
On the docket? The beef Clod! Another central Texas staple.
This is a slightly leaner cut from the shoulder / chuck area, mainly consisting of the :
Teres Major, Ranch Steak, and the Blade steak. Excited to see how it turns out!!
We are also having a brisket off!!
The house brisket, vs a new prime brisket and a AAA brisket. Stay tuned for the results tomorrow!!!

Nothing against pellet smokers. I've just never used them. We went from a Weber Grills Canada to an Oklahoma Joe's Smokers to 2x Southern Pride BBQ Smokers and now a big 500 gal offset!! Let the smoke roll!!
