Our freshly made plantain empanadas filled with your choice of cheese, beef, chicken filling, these are called empanadas de verde in Ecuador, and are naturally GLUTEN FREE! empanadas made using a green plantain dough.

MAKE IT VEGAN:

These are also a great alternative to get your empanada fix these plantain empanadas can be filled with our flavourful beyond the ‘beef’ or vegan ‘cheese’ with onions.

Krista has been very kind and supportive mama who runs . ⬅️

Since collaborating with her, she has helped Carmela’s Kitchen & Co. connect with other amazing mamas, and business’s. Who are apart of a very loving and supportive community. Her ‘promotions’ and ‘giveaway posts’ has brought us new customer turn over. Also more exposure on other platforms like Facebook and here Instagram.

Just wanted to share how blessed we feel to have made these new connections and looking forward to continue to provide our delicious food to everyone.

Meet Carmela, my inspiration for this business venture: my grandma or like we call her Abuelita in Spanish. A strong independent woman who sacrificed it all for her kids being a single mother of 5. This picture was taken 32 years ago. My fondest memories with her are in the kitchen making traditional Ecuadorian dishes all from scratch. She is very detail oriented and recipes had to be executed to a T. She wanted every part of the cooking process to be followed meticulously or else it wasn’t good enough to eat or serve. Having her own restaurant located downtown Quito, Ecuador called El Paso de Los Monos. She left that behind to come to Canada while she was in her mid 40’s to the ‘land of opportunity.’ Where she helped raise her grandchildren. I’m so blessed to have been able to learn her recipes. Which has inspired me to recreate her dishes and serve them to our customers. Using the same passion and traditions of her Ecuadorian recipes. She will be 92 this year, I’m so grateful she’s still with us. Although it’s been extremely heartbreaking not being able to see her face to face due to this pandemic. We are grateful that her nursing home is able to get us to connect on a weekly bases via FaceTime. I love you Abuelita thank you for sharing your recipes with me and being the SUPERWOMAN I could look up to. ❤❤❤❤
