MAUI RIBS:

One of our favourite things is teaching you, our customers, about different cuts of meat. We are proud to utilize every single part of the animal we serve to you, to the best of our ability. Shout out to Butcher Chad for his incredible expertise in that department. Today’s “cut of the week” is deep routed in Hawaiian tradition, but isn’t limited to that taste alone!

Maui Ribs are beef short ribs cut thinly across the bone. Typically cut to 1/4”-1/2” thickness.

Historically, they are prepared as shown below:

Ingredients
* 1/2 cup soy sauce or tamari
* 1/3 cup packed brown sugar
* 1/4 cup chopped green onions
* 2 tbsp sesame oil
* 2 tbsp rice vinegar
* 3–4 cloves of crushed or garlic
* 1 tbsp fresh grated ginger
* 1/2 grated Asian pear or kiwi (acts as a natural meat tenderizer)
* A pinch of red pepper flakes (optional)

Marinating Times
* Minimum Time (6 to 8 hours): You can get away with a shorter soak if you are in a rush.
* Ideal Time (12 to 24 hours): This is the sweet spot. The meat absorbs maximum flavor without the texture becoming mushy.
* Maximum Time (Up to 48 hours): Because Maui ribs are generally thin, marinating them for more than 2 days can break down the meat too much.

Grilling Tips
* Wipe off the excess: Maui marinades are high in sugar. Wipe off the excess before placing them on the grill to prevent them from burning.
* Cook hot and fast: Because they are cut thin, these ribs cook incredibly fast on a hot barbecue—about 3 to 5 minutes per side.

There you have it. Traditional Hawaiian Maui Ribs. I’ve had them, and they are TO. DIE. FOR. But I’ve also done them a much simpler way!

- Option 1: Find yourself a nice sweet chilli or BBQ marinade, put them in the oven on 280 for 1.5-2 hours. Take them out, give them a quick sear on the BBQ, and serve with a side of your choice!
- Option 2: Same as option 1, but in a slow cooker until you see them starting to separate from the bone. BBQ finishing optional. Serve with the side of your choice!
