These knives are available now at NordquistDesigns.com!

For today’s Limited Knife drop I made four S-grind knives with highly figured, stabilized hardwood handles.

The first two blades are a gyuto and a harpoon point chef with hybrid burl and cast resin handles. The resin flows around the natural live edge, and the beautiful, organic grain of the burls ensures no two perspectives of the handles are the same!

The chef’s ancient bog oak insert draws out the subtle dark undertones in the ash burl. The gyuto’s warm copper insert, which shares the blade’s machined starburst pattern, is set into the side of the highly figured maple burl handle.

The final two blades feature stabilized and dyed hardwood handles with inserts that mirror the machined starburst pattern of their blades.
The harpoon point chef’s sculpted handle is made from curly maple and bronze. The gyuto’s wa style handle is crafted from nepal alder and brass. Each wood has tight figure throughout that wraps around the finished handle.

Today’s limited knife drop features three custom cerakoted knives with composite handles. These knives have bold, graphic handles that match the blade’s deep blue cerakote finish. My good friend Josh, who has done all of the cerakote work on my knives is moving away, so these will be the last blades we collaborate on for a while.

Today’s Limited Knife Drop features a pair of harpoon point chefs!

The first chef has a handle sculpted from stabilized buckeye burl. The hardwood has beautiful tones and an expressive figure that flows beautifully along the handle’s curves. Drawing it together with the darkened satin finish blade is a pattern matched insert, machined from macassar ebony.

The second chef is of the small variety, measuring in at 170mm. Its sculpted handle is made from stabilized walnut with a live edge cast in swirling resin. Completing the handle is a machined brass insert matching the starburst pattern of the darkened blade.

It’s that time of year again where I make a batch of Production Knives, and this time I will be adding a new knife to the lineup! The Small Harpoon Point Chef.

The Small Chef measures in at 55mm (2”) shorter than the Standard Harpoon Point Chef, while retaining the same milled S-Grind geometry as its larger sibling. I’m particularly happy with the proportion and balance of this knife; it has quickly become a favourite of mine!

The Small Chef also features the same matte black Cerakote ceramic coating and carbon fibre impregnated 3D printed handle as the rest of the Production Series Knives, for a consistent experience across the lineup.

All four blade styles will be available in this batch: Gyuto, Harpoon Point Chef, Nakiri and the new Small Harpoon Point Chef. See the listings below for details of each blade. There are only a limited number of each blade available.

Pre orders are now open at NordquistDesigns.com! Orders are estimated to ship the second week in July, 2026.

I am now offering the option to make 4 equal payments (no fees or interest) over the approx. 7-8 weeks it will take to complete these knives. On the product page, select the Four (4) Payments option and complete checkout. I will send 3 invoices for the remaining payments to the email on the original order. All 4 payments must be completed before the knife will ship.

Three blade styles are available in this batch: gyuto, harpoon point chef, and nakiri. Only six of each blade style are available. Orders are estimated to ship the first week in December, 2025.

These two blades are now available at NordquistDesigns.com!

Each knife in today’s drop features a machined starburst S-grind blade with a matching starburst pattern insert. The harpoon point chefs blade has a dark gunmetal finish, sculpted handle, and copper insert. The handle is sculpted from stabilized Chechen burl and the translucent resin reveals the unique live edge of the burl!

I went a different direction with the gyuto, choosing a bright satin finish for the blade and wa style handle. The handle is shaped from stabilized Buckeye Burl and rich Macassar Ebony. This example of buckeye burl has dynamic figure and colour that flows into a live edge encapsulated in resin to preserve its natural beauty!

Saturday’s Limited Knife drop features four harpoon point chefs. Each one has been custom cerekoted by my friend Josh and engraved 2025, 1/1. Josh’s artistry really shines through on these blades! Inspired by my Limited Production Series Knives, these knives have the same carbon fibre impregnated 3D printed handle and friction fit saya, colour matched to each unique blade.

Three Limited Knives and a five of each spatula style are now in stock at NordquistDesigns.com!

Each of the three blades in this drop has a machined starburst S-grind blade with a matching starburst pattern insert. Both the harpoon point chef and the nakiri’s blades share the same dark gunmetal finish and sculpted handles. The handles are both sculpted from stabilized Chechen burl and resin— opaque black on the nakiri, and translucent on the chef, revealing the unique live edge of the burl!

I went a different direction with the gyuto, choosing a bright satin finish for the blade and wa style handle. The handle is shaped from a block of stabilized Tasmanian Blackwood and rich Macassar Ebony. The grain in the timber is spectacular with a tight figure throughout and lovely contrast between the heart and sap wood!
