Jon made something delicious with the skate wings this week. Now you can too!

Ingredients:
Parsley, butter, skate wing, capers (or green peppercorns), flour seasoned with salt and pepper.
Method:
Pre-heat oven to 350F.

Sprinkle skate with flour and sear in hot oiled skillet to brown.

After a couple of minutes, flip the skate and put into the oven for 8 mins.

To make the sauce, heat the butter and skim off white froth (milk solids), heating until it goes brown and smells nutty. Add the parsley, capers and a good squeeze of lemon. Pour over the skate once it’s out the oven.

Jon just came back from the Island with a VERY full load of beautiful fresh, wild BC sockeye. He wanted to share some thoughts with you all:

It struck me on this trip that the dockside crew are kind of unsung heroes and heroines of the seafood supply chain.

A lot of attention (rightly) goes to fish harvesters, and those that market seafood, but these folks show up at 1am and skillfully and cheerfully prepare the catch to go to market in the best condition possible.

The care they take over the fish doesn’t just add huge value to the fishery but it also contributes to the superb eating qualities of our small boat wild fisheries.

We are supporting our East Coast seafood growers this week who are suffering catastrophic losses with the MSX outbreak in oysters. They may not have oysters, but they do have clams, so let’s eat em!
