What is Brazo de Mercedes?

Brazo de Mercedes is a popular Filipino dessert made of a soft meringue roll filled with rich custard.

“Brazo de Mercedes” means “Arm of Mercedes” in Spanish. The dessert traces back to the Spanish colonial period in the Philippines, where egg yolks were often used in rich desserts and egg whites were creatively repurposed into meringues.
