A lot of people ask what goes into making a lab beer, so here’s the highly scientific process behind it all.

T-21+ days: Jeremy asks for some obscure ingredient, yeast, or hops that we don’t have.
T-21 days: Mike reluctantly buys the ingredients.
T-20 days: Jeremy builds a recipe around the ingredients Mike compromised on and brews the beer.
T-20 to T-7 days: Beer ferments. Not much we can do here other than stare at bubbles and pretend we’re helping.
T-6 to T-2 days: Cold crash the beer. This drops the temperature so yeast and solids settle to the bottom of the tank.
T-1 day: Jeremy filters the beer, cleans the tank, and puts the beer back in for carbonation.
T-5 hours: Beer gets kegged. The lab goes live in a couple of hours.
T-4 hours: Mike hooks up the keg so we can get a picture and Jeremy’s tasting notes.
T-3 hours: Mike gets a social media post up about the beer, or faces an onslaught of phone calls asking what the lab beer of the week is.
T-2 hours: Mike adds the beer to the menu.
T-0: Keg gets tapped and the first beer is poured at exactly 4:00pm.

Then we immediately start the process all over again for next week’s lab.

This week, we have a Wit beer with coriander.

Sometimes things just don’t turn out how you expect. Our Cream Ale lab was supposed to be pouring on the creamer tap today, but somehow we managed to cram a little too much CO₂ into it.

Right now you’re getting about 3 inches of stubborn foam before you even see the beer. Not exactly the plan.

We’ve got a couple hours to wrestle it back into shape. See you at 4:00!
