Rolling through a sizeable (for us) volume of cortland today on the cider press.

I often get asked which apples make the best cider. The more seasons I spend growing apples and making cider, the more difficult I find that question to answer. They say wine is made in the vineyard, and I would continue to say that cider is made in the orchard. Just as important as the cultivar, is how and where the fruit is grown. Our best cortland blocks for cider tend to be those grown in low fertility, slightly drought prone soil. We like to hang the fruit on the tree as long as possible for the flavour and sugar to develop.

Stop by the cidery today for a chance to sample the “apple mousse” produced in the juice tray. Think roasted marshmallows, meringue, with subtle baked apple. Not sure where it comes from and is mainly a nuisance but sure is tasty!
