🥜 Peanut Sauce Tempeh Bowl
• 1 package Henry’s Original Tempeh
For the peanut sauce:
• 1/2 cup coconut milk
• 3 tbsp maple syrup
• 1 tbsp fresh ginger, grated
• 1 tbsp garlic, minced
• 2 tbsp sesame oil
• 2 tbsp lime juice
• 1/4 cup peanut butter
• 1 tbsp sriracha (optional)
• 1/4 cup soy sauce
• Water, as needed to thin
For the bowls:
• Cooked quinoa
• Lettuce
• Cucumber
• Shredded carrots & cabbage
• Snap peas
• Lime wedges
Directions:
Cut the tempeh into triangles and boil for 10 minutes.
Whisk together the peanut sauce ingredients until smooth.
Toss the tempeh with the sauce and marinate for at least 15 minutes.
Cook until golden and slightly crispy (saving the remaining sauce).
Assemble your bowls with quinoa and vegetables.
Top with the peanut sauce tempeh and drizzle the remaining sauce. Optional: Squeeze some fresh lime.
