Crispy salmon skin fails for the same reason crispy chicken skin fails. Any surface moisture creates steam the moment it meets heat, and steam prevents the Maillard browning that produces a crisp crust.

Patting the skin completely dry and salting it for 15 minutes beforehand draws out additional surface moisture by osmosis before any heat is involved.

Starting in a cold pan rather than a preheated one is specific to fish skin. As the pan gradually heats, the fat layer beneath the skin renders slowly and evenly, rather than seizing and curling the fillet the way a hot pan would on contact.

Save this and start your salmon in a cold pan, skin side down.
