Last day of the spring market at Havelock Farmer & Artisan Market! Today is 11am to 3pm and next week we start the summer market for 1pm to 6pm!

We've got lots of fresh lettuce, plus Sarah's freshly baked bread. We're also bringing some fresh cut flowers and we still have lots of transplants - it's not too late to plant for our area!

While most of the flooding in our fields has gone down since last week, we were graced by these two beautiful swans that came to visit with the ducks and geese. Too bad they didn't stay beyond a day!

The strawberries are coming in! Certainly one of the more difficult plants to start from seed, we've got many of them starting to come through and look forward to getting them planted in June.

Generally strawberries don't produce fruit until they are in their second season, but having started them indoors so early, we may just get lucky in the late summer!

How many can you see in this photo?!

Did you know that onions can be one of the most versatile vegetables for long-term preservation? Did you know that most onions sold in supermarkets are between 6-8 months old?
The easiest way to preserve freshly picked onions at home is to hang them and dry them in a dark warm room for 2-3 weeks before transferring them to a dark cool room for 3-5 months.
A closet on an exterior wall or a well-ventilated dark basement space is an ideal location- as long it's well-ventilated and not too humid.

Have a look at this U.S. agricultural extension office website for other great ways to preserve your onions!
