Millionaire shortbread cookies recipe ⬇️⬇️⬇️
3/4 cup salted butter
1/4 cup granulated sugar
1 cup packed brown sugar
1 egg & 1 yolk
2 tsp vanilla extract
1/2 tsp baking soda
1 3/4 cups flour
1 cup choc chips
1 cup toffee chunks (can use homemade or store bought skor/heath chips)
Optional- homemade toffee
1 cup butter
1 cup brown sugar
Cook together on medium/low until boiling. Continue cooking until toffee reaches the hard crack stage when a small amount is dropped into ice water. Pour onto parchment paper lined tray and set in the fridge to cool. Once cool, smash into bite sized pieces.
For cookies:
Split butter into two equal portions and put one into large heat safe bowl. Brown half the butter on medium heat, keeping an eye and stirring consistently. Once browned, pour into bowl containing other half of butter to allow to cool. Once butter is cool or barely warm, add in both sugars and cream together. Add egg and yolk, and fully incorporate. Add vanilla, mix again. Add the dry ingredients and mix until just combined. Finally, add your mix-ins (this can be chocolate chips, or toffee, or nuts, or m&ms, etc- just keep the proportions similar) and stir through again.
Scoop dough into portions on cookie sheet and refrigerate for an hour or overnight. Bake at 350f for around 11-12 minutes, or until the edges are browned and the middle still appear uncooked. If using big chunks of homemade toffee the cookies will spread- use a pastry ring or a mug to scoot them into a tighter circle. Allow to cool and then enjoy!
