Another busy week for Beau’s 🌮✨
Come catch us around town this week — especially Friday at Food Truck Friday!

On the 28th, we’ll be serving at Costco’s Employee Appreciation event. Their staff will be first priority for service, but we will still be open to the public! We’re just not 100% sure on placement yet — we’ll post all the details to our story once we know 😊

Four years ago, we rolled into Spectrum Ale Works with two little induction flattops, a soup warmer, and tacos. That was it 🌮😂
No written menu — just vibes and verbal orders hahah.

We definitely tripped the breaker a few times ⚡️ (okay… probably 4 😅), had no real system for taking orders, and were figuring it all out as we went (with the help of our mom's too haha). But people showed up, people loved it, and honestly… WE loved it too.

Every year since, we’ve added a little more to the puzzle 🧩
➡️ a Blackstone grill
➡️ proper catering gear
➡️ an actual printed menu 😂
➡️ and eventually… THE TRUCK 🚚🔥

Now we’re heading into our 4th year popping up at this absolute gem of a brewery, and we’re feeling extra grateful for everyone who’s supported us from day one ❤️

🌮🚚 Summer Mode: Activating... ☀️

As summer rolls in, so does our busiest season — and that means it’s time for Amarilla to hit the road. 🚛

⭐ THURSDAY APRIL 30TH + FRIDAY MAY 1ST WILL BE OUR LAST DAYS OPERATING FROM LADY LUCK LOUNGE ⭐

Summer is where our truck belongs: out in the community, alongside other amazing food trucks, serving up birria in the middle of all the action.

Because our team is still small but mighty, we can’t run both the kitchen inside Lady Luck Lounge and the truck at full capacity through the summer.

🚨 So, STARTING MAY 2nd, our kitchen at Lady Luck Lounge will be CLOSED for the season. 🚨
From May until fall, Beau’s Birria & Taqueria will be fully operating out of the food truck. ⭐ 🌮

To everyone who came by the lounge this winter — thank you for keeping us rolling through the colder months. Your support meant everything. 🙏🏻

Now we’re beyond ready to get back out into the city, be part of the summer buzz, and join all the crazy rad events this season brings.

We’ll post our monthly truck schedule, to keep you up to date!! but keep an eye on our stories too — summer always brings last-minute pop-ups and surprise stops.

We can’t wait to see familiar faces, meet new ones, and sling tacos in the sunshine.
