How to get perfect hard boiled eggs from farm fresh:
Everyone’s out here saying you need to tap them or poke holes in them, steam them or use baking soda or one of a million other tricks.
The truth is the membrane just bonds too tightly to the white of an egg that’s really fresh. Plan ahead- let that carton sit on the counter (unwashed) for at least a week before you even think about boiling them. 2 weeks in the fridge if they’re washed. It’s a perfect thing to do with older eggs that have been hanging around a little too long to help the family eat them up quickly.
I put them in a pot of cold water and bring them just to a boil. Shut the stove off, put the lid on, and let them sit on the warm element for 6 minutes. Then drain, shake the pot to crack the shells, fill the pot with cold water and peel whenever they’re cool enough to handle.
That’s just the right amount of time for the yolks to be set but still bright yellow and just the teensiest bit jammy in the very centre, but if you like your yolks really solid just leave them one extra minute.
