This is my go-to weeknight comfort food that’s actually so good for you!

Rapini Garlic Chili Pasta

Ingredients

* 450 g pasta
* 1–2 bunches rapini, chopped
* 4–6 cloves garlic, roughly chopped
* 2–4 whole dried chiles
* 3–4 tbsp olive oil
* ½–¾ cup nutritional yeast
* Salt
* Reserved pasta water
* Carmela’s Teff Crackers (CTC), crushed

Method

1. Cook pasta in salted water until al dente. Reserve 2 cups pasta water.
2. In a large pan, heat olive oil over medium heat. Add garlic, chiles, and salt. Cook until fragrant and lightly golden.
3. Add rapini, toss, cover, and cook until just tender (4–6 minutes).
4. Add pasta and toss everything together.
5. Add nutritional yeast and splashes of pasta water, stirring until creamy and glossy.
6. Plate and finish with a generous sprinkle of crushed CTC.

Finish with Carmela’s Teff Crackers (CTC) for that crunchy, protein-packed topping! Link in bio 😊

Rappini is dreaded as a child, but somehow later in life I can’t just buy 1 bunch 🌱🍝

Full recipe in the comments!

I like to add my teff pangratto for the finishing touch!

Teff Cracker Pangrattato

2 cups crushed teff crackers
1 garlic clove, minced
1/2 cup finely chopped flat-leaf parsley
1/2 cup nutritional yeast
1/2 tsp sea salt
1/2 tsp black pepper

Mix everything together. That’s it.
Rustic, salty, herby crunch.

Currently OBSESSED with this “Berry Seed Bark” available 🤤

If you could remix it into your own bark… what are you adding? I’ll make my favourite combo 👀”
