đChili Dogsđ
Whatâs not to love about a hot dog smothered in chili and topped with cheese? Serve this with lots of napkins!
Prep Time: 30 Min | Cook Time: 30 Min | Total Time: 1 Hour
â¨Ingredientsâ¨
Red Bean Chili (makes about 11 cups)
4 strips of thick smoked bacon, chopped
1 large onion, diced
2 lbs lean ground beef
2 tbsp chili powder
1 tbsp ground cumin
1 tbsp Weekend At The Cottage Tomato Garlic Dip blend
1 tsp smoked paprika
1 can diced tomatoes (1 can = 26.92oz/796ml)
4 tbsp Alpino concentrated tomato paste (4 Tbsp Alpino is equivalent to a 5.5oz tin of basic tomato paste)
1 cup beer
4 cups cooked Ferguson Farms red kidney beans
Chili Dogs
6 quality hot dogs or sausages
6 hot dog buns
2 cups of warmed up Red Bean Chili
1 cup of grated Tex Mex cheese
sliced green onions (optional)
â¨Instructionsâ¨
Red Bean Chili
1. Cook the bacon in a stock pot or Dutch oven over medium high heat until crispy.
2. Add the onion and cook until soft.
3. Add the chili powder, cumin, Weekend At The Cottage tomato garlic dip blend and paprika.
4. Add the ground beef and continue to cook until no longer pink.
5. Stir in the tomatoes, tomato paste and beer.
6. Add the beans and reheat.
7. Season with salt and pepper to taste.
Chili Dogs
8. Cook the hot dogs on an outdoor grill or in a skillet on the stovetop until light golden.
9. Toast the buns gently on an outdoor grill or in a toaster oven.
10. Place the hot dogs in the buns. Spoon 1/3 c. of chili evenly over the top of each.
11. Sprinkle with the cheese. Place all on a sheet pan.
12. Place in a toaster oven until the cheese is melted (or on the bbq on low heat with the lid closed).
13. Garnish with onions and enjoy!
Makes 6 Servings.
