Come out to this Sunday and get your Spring Market on! Mother’s Day is around the corner and wouldn’t a beautiful (and tasty) bottle of syrup make a great gift???

5 weeks, 27 boils, many hours of lost sleep, many more grey hairs, lots of coffee and with that the 2026 sugar season has come to an end 🍁

All the signs of Spring are out on the farm - taps pulled out, wild ramps growing in the bush, the samples of the season, bees flying around, etc. 🌷🌺🌼🌷🌸

Using syrup isn’t just for pancakes

Real maple syrup is boiled tree sap, nothing added, nothing taken away. Around 40 litres of sap and hours of heat for one litre of syrup. Most “pancake” syrups contain no maple at all. Other sweeteners have ingredients you can’t even pronounce.

The sap was pouring in this afternoon with this warm weather! Maple sap is roughly 98% water. When it comes out of the tree, it’s clear and just slightly sweet in taste.

The amber color we know and love comes when the sap boils down into delicious Maple Syrup. It takes roughly 40 Litres of sap to make 1 Litre of syrup 🍁

Early Spring weather can be up and down - although we are all looking forward to warmer days making syrup depends on that classic freeze and thaw cycle. ❄️🍁

Sap runs when nights freeze and days thaw. That back and forth is what creates pressure inside the tree and gets things moving.
