This Micro Chopped Kale Salad might just change your mind. The secret is chopping the kale extra fine, creating a salad that’s fresh, flavourful, and easy to enjoy in every bite 👨🏼🌾💚
Packed with avocado, parmesan, toasted pine nuts, and a bright jalapeño lemon dressing, it’s the perfect balance of crunchy, creamy, and refreshing.

🥗 SALAD
• 1 bunch curly kale, stems removed and very finely chopped
• 1 tsp avocado oil
• 1 avocado, chopped
• 1 jalapeño, thinly sliced, seeds removed
• 1/3 cup pine nuts
• 1/2 cup panko breadcrumbs
• 3/4 cup parmigiano cheese, finely grated
• 1 lemon, zested
🍋 DRESSING
• 1/3 cup avocado oil
• 1/4 cup honey
• Juice of 1 lemon
• 4 slices jalapeño, seeds removed
• 1 tsp Dijon mustard
• 2 cloves garlic
• 1 tsp kosher salt
• 1/2 tsp black pepper
✨ Directions:
Remove stems from kale and chop very finely. Add avocado oil and massage kale for 1 minute to soften.
Add avocado, jalapeño, and parmesan to the bowl.
Toast pine nuts in a pan for 3 to 4 minutes. Add breadcrumbs and toast for another 2 minutes. Add to the salad.
Blend all dressing ingredients until smooth and creamy.
Pour dressing over the salad, add lemon zest, toss, and enjoy!
