Rogan Josh is an aromatic meat dish made with red meat, traditionally lamb or goat. It is one of the signature recipes of Kashmiri cuisine. Our recipe of Rogan Josh is passed on from my mother-in-law, and has been an all time favorite amongst family and friends. The goat is slow-cooked for hours and a secret magic masala added to it, makes it very special and aromatic. We are confident that this dish is original and created only by us. Birthdays are always special. Daughters are precious too. Giving you a glimpse of childhood, they make every occasion memorable. Today being a very special day for me, “Thali toh Banti hai.”
Now, coming back to the thali, each state of India has a different version of Kachori. This Kachori, unlike Khasta, is made with whole wheat flour, stuffed with urad dal masala, and served with Aloo ka Saag and Tadke Wala Dahi. Traditionally, this thali always has a sweet in it due to the high spice levels, so I have kept homemade Gulabjamun and Coconut Ladoo to make it a full meal.
