Last year when we were in Portugal we stopped for lunch at a food court in Lisbon.. Sure, the food courts in Lisbon have their McDonald’s, but I ate something that I needed to find a way to recreate. Grilled pork cutlets, potatoes and this magical green goop. This green goop is what has been making me crazy and last night I made Martha’s creamed spinach recipe from MarthaStewart.com I paired with an ice cold beer and transported back to that mall in Lisbon. (I pureed recipe in a blender - original recipe does not)
