BLOOMING EGG DELGHT

Ingredients:

• 4 HARD-BOILED EGGS
• 8–10 CHERRY TOMATOES
• ¼ CUP SLICED BLACK OLIVES
• 4–5 GREEN ONIONS (WITH GREEN TOPS)
• A HANDFUL OF FRESH CILANTRO LEAVES
• ½ TSP. PAPRIKA
• TO TASTE, SALT
• TO TASTE, PEPPER POWDER

Method:

1. Cut each egg lengthwise into quarters.
2. Arrange the egg wedges on a large plate in a circular pattern to resemble flower petals.
3. Sprinkle lightly with salt, pepper, and paprika.
4. Place sliced black olives in the center of the egg flower.
5. Arrange green onion stalks below the flower as stems.
6. Add cilantro leaves along the stems to resemble foliage.
7. Place cherry tomatoes around the stems and sides as decorative buds or blossoms.
8. Serve immediately as a light appetizer, breakfast platter, or side salad.

CRISPY PAN FRIED SALMON

Ingredients:

• 4 SALMON FILLETS, SKIN REMOVED
• 1 TSP. SALT
• ½ TSP. PEPPER POWDER
• 1 TSP. GARLIC POWDER
• 1 TSP. PAPRIKA
• 2 TBSP. LEMON JUICE
• ½ CUP ALL-PURPOSE FLOUR
• 2 EGGS, BEATEN
• 1 CUP BREADCRUMBS OR PANKO
• 2 TBSP. GRATED PARMESAN (OPTIONAL)
• 1 TSP. DRIED PARSLEY
• 4–5 TBSP. OIL

Method:

1. Pat salmon dry.
2. Season with salt, pepper, garlic powder, paprika, and lemon juice.
3. Let marinate for 15–20 minutes.
4. Coat each fillet in flour.
5. Dip into beaten eggs.
6. Press into breadcrumbs with Parmesan and parsley until fully coated.
7. Heat oil in a large skillet over medium heat.
8. Fry salmon for about 3–4 minutes per side, until golden brown and crispy. Drain on paper towels.
9. Cut the salmon into triangles. Serve with crinkle-cut fries and a dollop of creamy herb sauce and garnish with fresh mint.

MINT LEMONADE

Ingredients:

• 1 CUP FRESH MINT LEAVES
• ½ CUP FRESH LEMON JUICE
• ½ CUP WATER
• TO TASTE, SUGAR
• 1 TSP. BLACK SALT
• 1 TSP. CUMIN POWDER
• 2 ICE CUBES
• 2 CUPS WATER
• AS REQUIRED, MINT-LEMON ICE CUBES
• AS REQUIRED, SPARKLING DRINK/SODA

Method:

1. Add mint leaves, lemon juice, sugar, cumin powder, ice cubes and water to a blender. Blend until smooth.
2. Pour the mixture into ice cube trays and freeze until solid, preferably overnight.
3. To make the lemonade, place several mint lemon ice cubes in a pitcher.
4. Add water and dissolve the cubes.
5. In serving glasses, add ice cubes, pour the lemonade and top with chilled soda/sparkling drink and stir gently.
6. Serve immediately and enjoy the refreshing minty-citrus fizz.
