Moqueca is a rich seafood stew made with fish, shrimp, or both, simmered with vegetables and fresh herbs in traditional clay pots. Depending on the regional style, the broth is based on coconut milk and palm oil or olive oil, and it is typically served over rice.

The dish dates back about 300 years, shaped by cultural influences from Portugal—who introduced coconuts—and enslaved Africans, who brought palm oil into Brazilian cooking. Regional variations include moqueca baiana from Bahia in the northeast, known for its coconut milk and palm oil, and moqueca capixaba from Espírito Santo, which uses olive oil instead.

Moqueca is usually finished with freshly chopped cilantro and served alongside rice, pirão (a thick fish gravy), or farofa (toasted cassava flour).

The Reuben is a warm, melty sandwich made with corned beef, rye bread, sauerkraut, Russian dressing, and Swiss cheese. One popular origin story claims it was created in 1914 at Manhattan’s Reuben Delicatessen, where owner Arnold Reuben put it together for an out-of-work actress who wanted something new.

Although the mix of meat and cheese isn’t kosher, the sandwich is still common in Jewish delis, as it’s part of Jewish American food culture and largely enjoyed by those who aren’t strictly observant. Like many iconic dishes, the Reuben has inspired countless variations, including the Rachel, the grouper Reuben, the West Coast Reuben, the Montreal Reuben, and even Reuben egg rolls.

Savory, messy, and deeply satisfying, the Reuben remains a beloved staple of New York cuisine. 🇺🇸

11/21/2025

Jollof rice is a beloved West African dish made by cooking rice in a rich blend of tomatoes, onions, peppers, and spices until the grains absorb the sauce and develop a vibrant red or orange color. It is enjoyed across the region—including in Nigeria, Ghana, Senegal, Sierra Leone, Liberia, The Gambia, and Cameroon—with each country offering its own distinct preparation style and flavor profile.

The dish traces its origins to the Wolof-speaking regions of present-day Senegal and The Gambia. There, one-pot rice dishes emerged within the historical Wolof kingdom and spread over time through trade and migration. Early tomato-based rice dishes, such as benachin, formed the foundation for what later evolved into jollof rice as it traveled eastward and adapted to local tastes across West Africa. 🇬🇭

Gua Bao — Taiwan’s most legendary street food — is a fluffy steamed bun bursting with bold, savory perfection. Inside its pillowy fold lies melt-in-your-mouth pork belly, braised to glossy tenderness in a rich blend of soy sauce, red wine, and aromatic five-spice. Each bite is a beautiful contrast of sweet, salty, sour, and nutty — topped with crisp pickled mustard greens, fresh cilantro, and a sprinkle of crushed peanut sugar for that irresistible finish.

You’ll find gua bao sizzling away at Taiwan’s buzzing night markets, where the air is filled with steam, spice, and the chatter of hungry locals. Soft, juicy, and soul-satisfying — it’s no wonder this handheld masterpiece is lovingly called the “Taiwanese hamburger.” 🇹🇼
