Delicious, filling, and easy.
Omelette
1 egg
Smidgen of water
Finely chopped bell pepper, tomato, onion
Salt, pepper, your favourite seasonings
Grated cheese
Lettuce, cucumber, salsa
Mix everything listed above the lettuce together. Cook on low heat in a non-stick or light pan. Put the lettuce on the rusk. When the egg is cooked remove it to a plate and roll it. Careful it is hot! Put it on the lettuce and top with salsa and cucumber.
Add any ingredients you like. This was served with leftover gluten-free pasta with sausage and a dill pickle.
