Delicious, filling, and easy.

Omelette
1 egg
Smidgen of water
Finely chopped bell pepper, tomato, onion
Salt, pepper, your favourite seasonings
Grated cheese
Lettuce, cucumber, salsa

Mix everything listed above the lettuce together. Cook on low heat in a non-stick or light pan. Put the lettuce on the rusk. When the egg is cooked remove it to a plate and roll it. Careful it is hot! Put it on the lettuce and top with salsa and cucumber.

Add any ingredients you like. This was served with leftover gluten-free pasta with sausage and a dill pickle.

Today’s Breakfast. Homemade gluten-free pierogi (topped with plain lactose-free Greek yogurt), and cayenne cheese muffins (topped with blueberry jam).

The omelette is made with 1 egg, tiny drizzle of water, salt, pepper, and Italian seasoning. The filling is ¼ fresh tomato, leftover steamed broccoli, sautéed zucchini and mushroom with ½ slice cooked bacon and some lactose-free cheddar cheese.

Delicious. Filling. And a perfect start to the day. With a breakfast like this lunch is a snack and then I have dinner.

Lovely gluten-free breakfast, lunch, snack or dinner meal. Delicious and it hit the spot for me.

Here are the ingredients for 1 person. You can increase the quantities as you need.

1 egg, 1 tsp water
1 slice cooked bacon
Handful or less of grated cheddar or mozzarella cheese
Dash of pepper, Italian seasoning, salt
Dash of onion, garlic, and cayenne pepper if desired
1 tostada
1 slice of lettuce washed and dried
3 thin slices of cucumber, round
1 thin slice of tomato cut into 3
2 tbsp of Greek yogurt plain
1 tbsp salsa or a dash of hot sauce

Heat a frying pan on medium with a bit of oil. Crack the egg into a bowl and mix in the water. Crumble the bacon into the egg and add seasoning. Mix and pour into pan. Cook on low heat. Add the cheese on top. Continue cooking the egg gently. You do not to cover it unless you are using more eggs in a small pan and it is thick.
Put the tostada on a plate, add lettuce, then cucumber and tomato. Add a bit of seasoning. Mix the yogurt and salsa or hot sauce together and spread a little bit in the cucumber and tomatoes.
When the egg is cooked and you can lift it from the pan, layer it on the tostada. If you are cooking eggs for several people, put the egg on a plate and cut it into portions then put each portion on the prepared tostadas.
Add the remaining sauce to the center and more seasoning if you want.

Simple, delicious, light yet filling and gluten-free. Enjoy. 😍

I confess that I love salad. I will have salad for any meal at any time of the year. This was my breakfast today.

Romaine & curly lettuce
Baby spinach
Green cabbage
Tomatoes, red bell pepper, cucumber, mushrooms, onion
Hard boiled egg
Avocado
Salt, pepper, Italian seasoning, onion & garlic powder
Dressing: olive oil, balsamic vinegar, apple cider vinegar, plain yogurt, salt, pepper, mustard powder

Delicious, filling, anti-inflammatory

I can't believe how simple and delicious this meal is. Poke Bowl with leftovers. In this case I used Thanksgiving leftovers.

I don't cook turkey anymore so I used leftover chicken, peas, corn, sauteed onions, bell peppers and mushrooms with rice and leafy greens. Topped with a cranberry salad dressing.

TIP: Anytime you have leftovers, make a Poke Bowl. In fact, you can put the leftovers, warmed up except for the leafy greens, on the table and give everyone a bowl. Each person assembles their own bowl and Voilà dinner is served. Quick, easy, and your leftovers are not sitting going to waste!

This recipe fills both requests. Mahshi - Egyptian Stuffed Vegetables

You can stuff almost any vegetable that you like. I show you how to stuff zucchinni, bell pepper, and mushrooms. In this version, I use rice and ground beef, but you can use any other meat you enjoy or tofu or just leave out the meat.
