HUMMINGBIRD CAKE

This wonderful spiced cake is made with banana, pineapple and pecans. My version is filled with cream cheese mousseline, fresh and roasted pineapple, and to top it all off, some maple caramel and chopped toasted pecans 😊

First cake at the new condo is the classic carrot cake. Used the cream cheese frosting recipe from which is basically a cream cheese mousseline. I really like it. So creamy and less sweet than the stuff made with icing sugar. Thanks for the great recipes, Stella! Loving your book, too. 😋

Did someone say pie?
This wild blueberry pie was made for Christmas, but I'd eat this any day! I tinkered with the spices and added cinnamon, cardamom, ginger, and of course, vanilla. It was delicious. With a classic buttery pâte brisée, the crust was flaky and tender 🤤🤤 @ Griffintown
