This is my go-to protein-packed lunch when I need something quick! ✨ These Thai Fried Chicken Meatballs (aka G*i Gon Tod) are so juicy and ready in just 20 minutes. Save this recipe for your next quick lunch!

Ingredients:
* Ground chicken
* 3 cloves garlic, pounded
* Black pepper, pounded
* Coriander root, pounded (optional)
* 1 tsp sugar
* 1 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tsp sesame oil
* 2 tbsp cooking oil
* Chopped onion & carrot
* 1 tbsp cornstarch
* Thai chili, for garnish
* Shallot, for garnish

I don’t think words can truly describe how beautiful Newfoundland is. The closest I can come is calling it a little piece of heaven on Earth.

The breathtaking landscapes, the icebergs, the warm and welcoming of people there, and some of the freshest seafood I’ve ever had.

I’ve been lucky enough to travel to many incredible places around the world, but Newfoundland has completely stolen my heart. It may have already taken the #1 spot on my list of favorite destinations.
