Instructions

Instructions

* 4 large bell peppers
* 1 lb lean ground turkey or lean ground beef
* 1 tbsp olive oil
* 1 cup cooked Mexican-style rice
* 1 cup black beans, drained
* 1 cup chunky salsa
* 1 tsp chili powder
* 1 tsp ground cumin
* ½ tsp garlic powder
* 1½ cups shredded Monterey Jack cheese
* Fresh cilantro, chopped
Instructions
1. Preheat the oven to 375°F (190°C).
2. Slice each bell pepper in half lengthwise and remove the seeds and membranes.
3. Heat olive oil in a skillet over medium heat.
4. Add the ground meat and cook until browned.
5. Stir in the cooked rice, black beans, salsa, chili powder, cumin, and garlic powder. Simmer for 3–4 minutes.
6. Arrange the pepper halves in a baking dish.
