Joel Smith is a Food and Commercial Photographer that creates visual media to represent each restaurants image or tell each company’s or personal story. Joel has been behind the lense for over 25 years and has worked in many kitchens. It became natural to combine his two passions to create compelling visual media that tells a story about food and culture.

This was a book title my brother read a long time ago. I have no idea what it was about or why I remember it so clearly.

Every time I eat these wonderful personal quiches, it reminds me of my brother and a good friend, Mark McLaughlin, who was a chef and taught me to make his wonderful, rich quiches.

I miss both these guys a lot. I'm grateful to have had them both in my life.

Food creates so many memories, and working in my family's cookbook has been an amazing time so far. I have borrowed my mom's and grandmother's cookbooks and have been working my way through them, creating my own book of memories, while keeping memories alive. I decided today that I will be adding my friends' food recipes to this book as well.

To answer the question chef..... One handed, one bite at a time.

~short ribs~
Well I found the short ribs I love! This is the fastest slowest meal ever!

They are stupid easy to make to be honest. Rich, tender, and BIG beef flavors.

~ Season meat with salt & pep

~ Reduce red wine reserving one glass for the chef.

~ Sear meat on all sides in a hot pan.

~ Veggies get a quick cook in the pan , deglaze with reserved red wine

All in a deep pan that will hold everything, I used stock to top up liquid just below the ribs.

In the over 325° until they are done!

I'm excited to start the new year off with a Culinary Writing Course with ! She is a talented chef, her cookbooks are stunning and I had the chance to hangout with her and her family, when they lived in Niagara.

When I saw her first post on this course, it hit a feel good spot for me. At that moment I was taking both my grandmother's cookbooks and the one my mom helped create. I was looking to create a cookbook of the recipes that I cooked with my mom and grandmother's. Her first time doing this course for me wasn't the right time for me.

Her next online course starts mid-January and runs 6 weeks, I decided that it is time for me to step into my very uncomfortable side of life since grade school. Writing has always been a part of my life that has caused me great strength.

I look forward to sharing and seeing you in this amazing course.

What's your chilli flex?

What makes your chilli taste ever level?

Do you add chocolate, peanut butter, curry?

I have started to use black strap molasses. It adds some sweetness and richness to it. After 2 hours of simmering, I add a good amount and let it simmer for another 30 mins. I also have started to use bison and beef mix.

Well for the time making buns, it went well.
They are edible and pretty tasty in my opinion.

The feeling of cooking makes me feel so good, I've missed the kitchen and one day 2 months ago I started to create once again.
It feels so good.

A simple mind shift, to get my ass off the couch surrounded by fast food wrappers was the starter of repairing myself, repairing my soul that was in a very very dark and very lonely place that not many knew.

I'm so grateful for the special people who have helped me, some might not even know you have. I will do my best to let you know and thank you 🙏
