This past weekend, my mom made a fantastic asparagus soup recipe!
Ingredients:
2 lbs asparagus
3 tbsp butter
2 medium yellow onions chopped
1 tbsp crushed garlic
6 cups chicken broth
1 tsp freshly ground black pepper
1 tsp table salt
3 tbsp freshly squeezed lemon juice
1/2 cup shredded Parmesan cheese
Instructions:
Melt butter in large pot over medium heat. Add onions and garlic and cook until soft and clear. In the meantime cut the tips off of one pound of asparagus and set aside. Cut remaining spears and another pound of asparagus into one inch pieces. Add chopped asparagus into pot with onions and garilc, add chicken broth, salt and pepper. Simmer for 30 minutes or until vegetables are very tender.
Next bring a small pot of salted water to a boil and cook the reserved asparagus tips for 3-4 minutes. Drain the tips and place them in a bowl of ice water to preserve their colour. Once the ice has melted remove tips and set aside.
Purée the soup in a blender until completely smooth. Pour soup back into pot and back to a simmer then stir in lemon juice and parmesan. To thicken soup, simmer uncovered until the desired consistency is reached. Add in asparagus tips and top with extra parmesan if desired. Serves 6.
