What should the hydration be on a hot summer day?
While doing pop ups, where you have to be consistent every single time, be it winter or summer, its both art and science in managing the dough.
The Victoria Day long weekend saw temperatures going 26-28 C during the daytime.
And due to hot and humid temperature we reduced our hydration to 60% from the usual 62%.
Hot and humid temperature speeds up the fermentation process in the dough, dough become sticker, absorbs moisture from the atmosphere and due to these reasons we dial down on the hydration % to make it consistent and last long during hot days.
